Patrick Bouju ‘J’ is a skin-contact wine made by natural wine legend Patrick Bouju in the Auvergne region. This wine uses Jacquère grapes sourced from Jean-Yves Péron in Savoie, where the vines grow organically on Basalt soils.
Péron’s grapes are hand-harvested before being vinified by Bouju. The wine undergoes spontaneous fermentation with native yeasts at ambient temperatures. It then undergoes a month of maceration on skins in concrete tanks, allowing the wine to develop a deeper character. Afterward, it is transferred to fibre tanks for aging, where it continues to evolve.
On the nose, Patrick Bouju ‘J’ offers aromatic notes of hay, candied orange, and lemon sherbet. The month-long skin contact imparts a delicate tannic structure, balanced by a vibrant acidity that highlights the Alpine freshness of Jacquère.
Bouju’s Domaine La Bohème, located in Saint-Georges-sur-Allier, was founded in 2004 out of his deep love for nature and an aversion to sulfites.
