Domaine des Fables “Poison Ivy”
Domaine des Fables ‘Poison Ivy’ is a skin-contact Jacquère from Chautagne in Savoie, made by François Gilles. The wine comes from organically farmed, 25-year-old vines grown at 400 meters on sandstone soils, surrounded by forest, meadows, and streams.
Hand-harvested grapes undergo partial maceration: 50% remain as whole bunches on skins for 15 days before pressing. Fermentation is spontaneous with native yeasts. The wine is aged on lees in neutral demi-muids and bottled without fining or filtration. Minimal sulfur is used, only if necessary.
In the glass, Domaine des Fables “Poison Ivy” shows a cloudy pale gold. Aromas lean toward citrus oil, white flowers, and alpine herbs. The palate is taut and slightly textured, with crisp acidity and a clean, mineral finish. A precise, layered white that shows both the clarity of Jacquère and the added dimension of skin contact.
