These tangible qualities can find physical and figurative form in just about anything yet for the anoraks, they generally occupy a 75 centilitre space. Overwhelmingly demonstrative of these buoys in a stormy sea are the wines of a 5.5ha estate called Domaine de la Borde. Julien Mareschel, producer and divine gift-giver, enraptures with his Savagnin ouillé; a wine topped-up with no oxidation. Self-assured notes of fervent citrus begin the hypnosis, as a Siren’s Song of ripe orchard fruit and touches of wax swaddle the tongue. A swarm of fresh grassy notes and exuberant punches of white pepper do nothing short of mesmerising. An endless, salivating finish that seems almost melancholy.

The Savagnin grapes grow on a steep, west-facing slope at 350-450 metres above sea level. Having hand-harvested, half of the yield is added to barrel in whole clusters while the other half undergo a de-stemming. Additionally, fermentation occurs with indigenous yeasts to be followed by 12 months of lees ageing. This is honest wine-making harmonising with unwavering respect for the terroir. Evidently, the marl schists are allowed to emerge in the form of a pristine minerality. Mareschel founded the estate in 2003; hailing from a cereal-growing family, he initialised his studies with agriculture. However, he quickly followed up with a wine-making diploma in Dijon and stints on Burgundian and Jurassian vineyards.
