The winemaking team uses indigenous yeasts and allows spontaneous fermentation to occur. The vatting period lasts around three weeks, and throughout the process, no sulfites are added. The wine ages for one year in large 57-hectoliter oak casks, giving it complexity and depth without the interference of sulfites.
Chateau du Cedre’s unique microclimate shapes its terroir. The estate lies equidistant from the Atlantic Ocean, the Pyrenees Mountains, and the Mediterranean Sea. This combination creates an oceanic climate through June, which transitions to a Mediterranean influence by July. The cooling effect of the Lot River in September moderates the temperature, helping the grapes ripen more evenly. Autumn breezes sweep across the vineyard, creating ideal conditions for maturation.
The Chateau du Cedre ‘Extra Libre’ Malbec grapes come from 30-year-old vines planted on limestone scree at the base of slopes and the Mindel high terrace. The soil contains ancient alluvial deposits from the Lot River, which date back 500,000 years. These deposits help give the wine a distinct sense of place.
Brothers Pascal and Jean-Marc Verhaeghe own Chateau du Cedre. They practice biodynamic viticulture, relying on natural methods to care for the land. Since 1992, the estate has avoided chemical treatments, using holistic farming to support vine health and quality. Their careful, low-intervention approach ensures that ‘Extra Libre’ Malbec authentically reflects the terroir of Cahors.
