Caparsa ‘Rosso di Caparsa‘ Toscana Indicazione Geografica Tipica. Predominantly Sangiovese with small amounts of Trebbiano and Malvasia. Grown at high altitude around 450m elevation. The vines here must root deep into the rocky soils to reach water, which results in fruit with excellent concentration. Expect a medium body, aromas of red cherries and flowers, a vibrant red hue in the glass. Overall, the wine shows agreeable smooth tannins and a hint of Tuscan rusticity. Therefore, Rosso di Caparsa stands as a lighter, approachable, highly drinkable Sangiovese at an accessible price.
in this enlightening interview, winegrower/maker Paolo Cianferoni describes his approach and motivations to carry on traditional techniques that allows him to create wines in a ‘spontaneous and honest way, without chemistry’. In the cellar, Cianferoni takes a hands-off, minimal interventionist approach. However, in the vineyard, he nurtures his vines with care and TLC in order to maintain biodiversity and consequently ensure the best possible fruit. Moreover, around 60% of the landscape of Radda in Chianti is woodland, which the winemaker says influences the wine and it’s production, ‘The fruit is influenced by the landscape … the natural complexity allows for production that is good, healthy, and fair.’
Fermentation starts spontaneously with indigenous yeasts, and the wine is matured in cement vats for 18-36 months.
