Bodega Cueva “Brutal Ancestral”
Bodega Cueva “Brutal Ancestral”. Ancestral method sparkling wine from Valencia, with Muscat of Alexandria and Macabeo grapes. Made using the pét-nat, or ancestral, method, where fermentation begins in tank and finishes in bottle. The wine is bottled while fermentation is still underway. This allows the natural yeasts to consume the remaining sugars and create carbon dioxide. These bubbles are captured in the bottle to produce its characteristic gentle fizz.
Bodega Cueva “Brutal Ancestral” introduces itself to the lucky drinker with a nose of ripe tropical fruits. The palate is juicy with a freshening fizz to cleanse the palate.
Founded in 2000 by Mariano Taberna, Bodega Cueva consists of 8 hectares and works with grapes purchased from organic, small producers. His is one of the first organic certified wineries, and his vineyards have never been treated with synthetic chemicals or pesticides. Biodiversity, healthy soils, and healthy vines are key to their work. Cueva works with a number of 100+ year old vines of Tempranillo, Bobal & Tardana.
