La Biancara, founded in 1988 by Angiolino Maule and his wife Rosamaria, has grown from its initial 6 hectares to encompass 9 hectares of vineyards set on volcanic slopes between Verona and Vicenza. Now joined by their sons Francesco and Alessandro, the Maule family has established themselves as pioneers of natural winemaking in Italy since the 1980s. Their commitment to organic farming involves maintaining vineyard health through natural methods – they use plant-based compost, herbal treatments for disease prevention, and encourage biodiversity by planting cereals and legumes between vine rows.
In the cellar, they follow a minimal intervention philosophy, relying on indigenous yeasts and avoiding filtration. Only trace amounts of sulfites are added at bottling, if at all, resulting in wines that purely express their terroir and grape varieties.
