L’Atitude 51 Presents ‘SUPRA’ – a shared table dinner, created by Georgian chefs from Poliphonia Restaurant, Tbilisi in collaboration with L’Atitude 51 as part of Cork on a Fork.
A ‘Supra’ (სუფრა) is a choreographed ritual of hospitality that binds food, wine and storytelling into a single shared experience.
We invite you to celebrate the spirit of this traditional Georgian Feast with a menu combining the finest of Cork’s ingredients with Georgia’s rich culinary heritage. The event will take place within the historic setting of St Peter’s Church and will see 100 guests dine long-table style, and true to Georgian tradition, will be led by a ‘Tamada’ (Toastmaster).
The word ‘Supra’ simply means “tablecloth” in Georgian and it is used to describe how shared dishes accumulate over the course of the meal to cover the table. Georgia’s location at the crossroads of Europe and Asia has shaped its table. Persian spices, Ottoman techniques and ancient Caucasian traditions all leave their imprint.
Wine anchors this continuity. Georgia is widely recognised as the oldest wine-producing region in the world, with archaeological evidence of winemaking dating back 8,000 years. Traditional Georgian wine is fermented and aged in qvevri—large clay vessels buried underground. At a supra, Georgian wine is not poured casually. It is introduced through toasts.
Tickets are priced at €120 per person including wine and €105 per person including non-alcoholic alternatives. As wine and toasts are an integral part of the Supra, we have included drinks for toasting in the ticket price. There will be the opportunity to purchase additional drinks on the evening.
