Foradori ‘Fontanasanta’ Nosiola
Foradori ‘Fontanasanta’ Nosiola comes from the Trento hills in northern Italy. It is made entirely from Nosiola, an ancient grape once common throughout Trentino. Today, its cultivation is limited to Valle dei Laghi, Colline di Trento, and Pressano. The vines grow on calcareous-clay soils. The vineyards are farmed biodynamically, resulting in fruit of exceptional purity and character.
This wine has a pale golden colour. The nose shows delicate floral notes, pear, quince and light citrus. Subtle hints of apricot and honey emerge with time. On the palate, it is fine and mineral, with crisp acidity and a long, gentle finish.
Fermentation occurs over eight months on the skins in Spanish tinaja amphorae. The wine also rests briefly in acacia casks. This method enhances the character of the grape and gives a pure, expressive flavour. It is best served around 15°C after a little aeration.
Foradori ‘Fontanasanta’ Nosiola pairs well with seafood, white meats, soft cheeses and vegetable dishes. It is clean, balanced, and shows the unique personality of the Nosiola grape. Production is small, just 10,000 bottles a year, reflecting the care taken in the vineyard and cellar.
