Hervé Villemade produces Cheverny Blanc from organically farmed vineyards in the eastern Loire Valley, near the village of Cellettes. Working within the Cheverny AOC, Villemade is known for minimal-intervention wines that focus on clarity, balance, and the expression of local terroir. He has been farming without synthetic chemicals since 2000 and follows low-input practices in the cellar.

This wine is a classic regional blend of Sauvignon Blanc and Chardonnay, typically in a ratio around 70:30, depending on the vintage. The Sauvignon provides structure, acidity, and citrus-driven aromatics, while Chardonnay adds softness and a subtle textural component. Grapes are harvested by hand, sorted, and fermented with indigenous yeasts in temperature-controlled stainless steel. No enzymes or additives are used. The wine undergoes aging on fine lees for a few months before bottling with light filtration and minimal sulfur.

Cheverny Blanc is bright and focused, with aromas of lemon zest, green apple, white flowers, and subtle flinty minerality. While on the palate, it’s linear and fresh with high acidity and a clean, dry finish. There’s no oak influence—just a pure, unadorned expression of the fruit and soil. It’s a versatile white that pairs well with seafood, fresh cheeses (especially goat cheese), and lighter vegetable dishes.
