Hervé Souhaut Blanc
Hervé Souhaut Blanc is a compelling white wine by Hervé Souhaut at Domaine Romaneaux-Destezet, a small, artisanal estate on the boundary between the northern Rhône and southern Ardèche. This wine is a blend of Viognier and Roussanne, varietals that thrive in the region’s granite and clay-limestone soils.
The winemaking process emphasises freshness and finesse. Grapes are directly pressed without maceration. The juice ferments and ages on its fine lees in old oak barrels for about eight months. This takes place under low temperatures, thus preserving the wine’s aromatic intensity and enhance texture without imparting overt oak flavours.
Hervé Souhaut Blanc shows fruit-driven aromas, with a mix of green apple, pear, and apricot, alongside delicate floral notes and a subtle tropical edge—a nod to the Viognier in the blend. The palate is medium-bodied and textural, offering a mouth-coating oiliness and richness balanced by fresh acidity. Meanwhile a gentle note of white pepper and saline minerality provides lift and length, making a food-friendly and complex wine.
Souhaut cultivates his vineyards organically, with minimal intervention in both the vineyard and cellar, reflecting his commitment to natural winemaking. The domaine covers a modest 5 hectares, and yields are extremely low—around 20 hectolitres per hectare. Accordingly, the wines show excellent concentration of fruit and reflect the terroir with clarity and intensity.
