A Taste of Lombardy

Enough white, red, orange, rosé, it’s time for some bubbles! Ok, the Poiré Granit from Normandy we brought you a few weeks ago was bubbly and delicious, but made from pears, not grapes. So this week’s box brings you to Lombardy to the region of Franciacorta (Italy’s ‘Champagne’ district) to sample one of my favourite Pétillants Naturels (Pet Nat for short). 

Pet Nats are trendy and very much of the moment, but have, in fact, been around for centuries – even before Dom Pérignon started to discover the magical chemistry between fermentation and carbon dioxide. 

Pet Nats are made according to the ancestral method (the oldest sparkling wine method) which dates back to the 16th century. Basically, fermenting juice is bottled while still fermenting, which causes a build-up of CO2 from the yeast as it continues to consume the remaining sugars, and causes the resulting wine to be bubbly. They’re clean, delicious and fun, not as powerful or heady as sparkling wines like ‘champagne’, made in the traditional method, but can be just as appealing, and a lot less demanding on your pocket!   

This week’s wine, ’Sullerba’, comes from Franciacorta producer “1701” – the first and only certified biodynamic producer in the Franciacorta region. The name ‘1701’ was chosen to recall the first vinification at the estate. It’s made from biodynamically farmed Chardonnay in the hills of Brescia in Lombardy. It’s dry, zesty and bright with hints of pineapple, grapefruit zest, white pepper and aromatic herbs. The mousse is delicate with fine bubbles, making for a great aperitif to celebrate the start of the weekend!

Lombardy is not one of the regions that immediately springs to mind when you think of Italian cuisine, yet the region has much to offer by way of delicious ingredients and signature dishes. We’ve had a lot of fun researching recipes and ingredients for this week’s box. And with such a versatile food wine, it’s been an absolute pleasure!
