30 year-old, dry- farmed vines provide the source for Ovum Wines ‘Big Salt’ – a co-fermentation of Riesling, Muscat and Gewurtzraminer. John House and Ksenija Kostic allow fermentation to occur spontaneously and subsequently linger for months in used oak barrels. Offering their wines to Gaia, Goddess Mother of the Earth, their cuveés are truly representative of each vintage and henceforth, incredibly honest. ‘Ovum’ refers both to the natural life-cycle of a wine and the concrete ‘au courant’ that the winery utilises. This is an egg-shaped foudre which offers a particular convection, allowing the lees to stir constantly and of their own volition. This is a raw, unveiled tour of Oregon terroir and a true reflection of the climate here, at the dais of which House and Kostic curtsey.
